We love banana bread and that turned out to be a good thing since my kids would go through periods of loving bananas, I couldn’t keep them on hand. Then of course they wouldn’t touch them so I would have several going bad at a time. Thus our love of banana bread was born!
If you are a beginner baker, this is the perfect recipe for you. I’ll walk you through the recipe in my video so you can master this delicious quick bread. It’s called ‘quick bread’ because there is no rise time. But the trick to a good quick bread is treating the batter gently. You don’t want to over mix this one.
This recipe is the most requested “how to” from my adult children. We add cinnamon to ours, but that’s optional for you. If you’d like to kick yours up a notch, definitely add that cinnamon!
Banana Bread with Home Milled Flour

- 3 large ripe bananas
- 1 cup sugar
- 1 large egg
- 4 Tablespoons butter, melted
- 3/4 cup home milled wheat flour
- 3/4 cup all purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- cinnamon sugar for dusting
Instructions
- Preheat oven to 325° and grease a 9×5 loaf pan.
- Into a large bowl or stand mixer, place your peeled, ripe bananas. Mash them well. You will have chunks of banana left and that's ok.3 large ripe bananas
- Add sugar to the bananas and mix well till very liquidy. Next, add the egg and beat in. Add your melted butter, making sure it's no longer scalding hot.1 cup sugar, 1 large egg, 4 Tablespoons butter, melted
- In a separate bowl, whisk flours, salt, baking soda and optional ground cinnamon till combined.3/4 cup home milled wheat flour, 3/4 cup all purpose flour, 1 teaspoon salt, 1 teaspoon baking soda, 1 teaspoon ground cinnamon
- Pour the mixed dry ingredients into the wet and mix gently by hand till just combined. You will have bits of dry flour visible and that's ok. We don't want to over mix this.
- Pour batter into a well greased loaf pan (mine are 9.5" x 5"). Sprinkle optional cinnamon sugar across the top.
- Bake in oven 55 to 60 minutes. Check for doneness but be aware that you want to keep this a little moist and your stick may have gooey chunks of banana on it. You can cover the bread with foil if it's over browning.
