This recipe is adapted for using home milled wheat flour. You don't need to use home milled wheat flour. Just sub your favorite flour for the home milled portion.
Into a large bowl or stand mixer, place your peeled, ripe bananas. Mash them well. You will have chunks of banana left and that's ok.
3 large ripe bananas
Add sugar to the bananas and mix well till very liquidy. Next, add the egg and beat in. Add your melted butter, making sure it's no longer scalding hot.

In a separate bowl, whisk flours, salt, baking soda and optional ground cinnamon till combined.
3/4 cup home milled wheat flour, 3/4 cup all purpose flour, 1 teaspoon salt, 1 teaspoon baking soda, 1 teaspoon ground cinnamon
Pour the mixed dry ingredients into the wet and mix gently by hand till just combined. You will have bits of dry flour visible and that's ok. We don't want to over mix this.
Pour batter into a well greased loaf pan (mine are 9.5" x 5"). Sprinkle optional cinnamon sugar across the top.
Bake in oven 55 to 60 minutes. Check for doneness but be aware that you want to keep this a little moist and your stick may have gooey chunks of banana on it. You can cover the bread with foil if it's over browning.
Notes
If you don't have or care for whole wheat flour, just use 1.5 cups all purpose flour.
