Ok, I know what you’re thinking, why would anyone make their own buffalo wing sauce when they can buy it at the store? If you’d like to add your favorite seasonings to your wing sauce, you may want to consider making your own. Or if you happen to be a person who is trying to cut out processed foods from your diet, you may be that person. Let’s take a quick peak at the labels for my favorite wing sauce
This is the label for my favorite wing sauce, Franks. Notice the additives they put in there during processing? There is also added oil that isn’t necessary for great tasting wing sauce.
I’m also a huge fan of using real ingredients, not a ‘natural butter type flavor’ 😉
Ingredients
Distilled Vinegar, Aged Cayenne Red Peppers, Salt, Water, Canola Oil, Paprika, Xanthan Gum, Natural Butter Type Flavor And Garlic Powder
Now we compare regular Frank’s RedHot hot sauce ingredients:
Nothing weird added, just simple ingredients to spice up any dish. Anything that gets added is real and you can control what’s going into your body better.
So let’s make some wing sauce!
Ingredients
Aged Cayenne, Red Peppers, Distilled Vinegar, Water, Salt And Garlic Powder
Weight of hot sauce x % of butter desired.
721g x .40 = 288.4g
You’ll need a kitchen scale for this recipe because we are dealing with percentages. And yes, there is a little math involved. You will place your pan on your kitchen scale, make sure the scale is then zeroed out (push the ‘tare’ button), and weigh the contents of whatever hot sauce you are adapting to wing sauce. When I am weighing recipes, I like using grams. It’s more precise than ounces because it is a smaller unit of measurement.
Once you have the weight of your hot sauce, you will begin experimenting with the amount of butter you want to incorporate. This amount is totally up to you! Some people like a very potent wing sauce, and so you. may want to start with only 30% butter in your hot sauce. We found that 40% was our sweet spot for smooth, zippy wings.
Next I add about a teaspoon of garlic powder, because I love garlic! This is an optional addition, you don’t have to add garlic if you’re not a fan.
Place the pan over medium heat and melt the butter fully. I allow the mixture to simmer for 5 minutes. You’ll want to store this in a microwavable container because without those processed additives, your butter will thicken again. We microwave the glass jar for a minute (removing the plastic lid) and then shake it up to make it pourable again. So delicious and exactly how we want our sauce to taste!
