Corned Beef Hash

Have you ever had corned beef hash? If not, this delightful and savory recipe is something you may want to try. My husband grew up eating this and his memories of the dish were bland and tasteless, but we’ve fixed that 😉

The only prep work for the dish is chopping up the ingredients. The corned beef you see in this recipe video is our homemade corned beef, but store bought is easy and cuts up great too!

Corned Beef Hash

This savory dish is a great way to use up leftover corned beef and is a hearty way to start the day.

Ingredients
  

  • 1/4 cup beef tallow, divided you can use butter
  • 1 large yellow onion, diced you'll want white or yellow for this recipe
  • 5 large gold potatoes any potato works for this recipe
  • salt and pepper
  • Greek seasoning
  • garlic powder
  • chipotle seasoning
  • 1 fried egg for topping each portion of hash
  • 1 dash hot sauce optional

Instructions
 

  • Place skillet over medium heat and drop 2 Tbsp of tallow (or butter) into the pan, allow to melt.
  • Toss in your diced onion and cook until sweating but not translucent (see through)
  • Toss in your diced tomato and sprinkle the top with: salt, pepper, Greek seasoning, and garlic powder. Stir occasionally while the potatoes become tan.
  • When potatoes begin to tan, sprinkle chipotle powder over potatoes and add another tablespoon of tallow (or butter) to keep the hash from sticking to your pan.
  • Taste your potatoes to determine if you need more seasonings and add accordingly.
  • Once the potatoes taste right, toss in the chopped corned beef, cook dish to desired doneness (potatoes will be soft and corned beef will be heated through). Once hash is done, keep warm while you cook your egg.
  • In another pan, fry an egg the way you like. Scoop hash into your bowl, top with your fried egg, and sprinkle hot sauce as desired over hash. This also tastes great with ketchup on top. Enjoy

Always start on the spare side of seasoning any dish! You can always add to it, you can’t take away if you accidentally go a little heavy handed. That’s why you’ll see professional chefs in cooking competitions taste their food as they go.
