chipotle seasoning

Instructions
Place skillet over medium heat and drop 2 Tbsp of tallow (or butter) into the pan, allow to melt.
Toss in your diced onion and cook until sweating but not translucent (see through)
Toss in your diced tomato and sprinkle the top with: salt, pepper, Greek seasoning, and garlic powder. Stir occasionally while the potatoes become tan.
When potatoes begin to tan, sprinkle chipotle powder over potatoes and add another tablespoon of tallow (or butter) to keep the hash from sticking to your pan.
Taste your potatoes to determine if you need more seasonings and add accordingly.
Once the potatoes taste right, toss in the chopped corned beef, cook dish to desired doneness (potatoes will be soft and corned beef will be heated through). Once hash is done, keep warm while you cook your egg.
In another pan, fry an egg the way you like. Scoop hash into your bowl, top with your fried egg, and sprinkle hot sauce as desired over hash. This also tastes great with ketchup on top. Enjoy
