Creamy Coleslaw

Coleslaw is an American picnic and potluck staple. It’s always available wherever you might order fried chicken. My people love it as a cold summer snack, so we make this a lot!

Most of the time I do shred my cabbage and chop my carrots to avoid any chemicals that exist making a coleslaw mix ‘shelf stable’. But if you are in a bind, you can grab classic coleslaw base from the grocery store.

Because I am feeding teenagers who love this, the video shows me making a huge double portion! You can adapt the amounts to fit your crew.

Creamy Coleslaw

Ingredients
  

Slaw

  • 1 head green cabbage, shredded
  • 4 large whole carrots, skinned and chopped
  • 1/4 head red cabbage, shredded

Dressing

  • 1 cup mayonnaise
  • 2 Tbsp sugar
  • 2 Tbsp distilled white vinegar
  • 2 tsp celery seed
  • 2 dashes salt

Instructions
 

  • Wash and shred your cabbage, skin and rough chop your carrots. (If you need a shortcut, purchase a bag of coleslaw base from the store)
    1 head green cabbage, shredded, 4 large whole carrots, skinned and chopped, 1/4 head red cabbage, shredded
  • In a separate bowl, mix your coleslaw dressing and mix well. Taste your dressing. If you prefer it sweeter, add more sugar 1 tsp at a time till perfect.
    1 cup mayonnaise, 2 Tbsp sugar, 2 Tbsp distilled white vinegar, 2 tsp celery seed, 2 dashes salt
  • Pour dressing over cabbage slaw and mix. Cabbage may appear dry, but will release moisture while marinating.
  • Chill in the fridge for a few hours to overnight for flavors to marry.
  • Occasionally stir slaw, if you think it needs more dressing, whip up a small batch and add to coleslaw.

Notes

You can buy classic coleslaw base as a shortcut. I used 2 -14oz bags in the video.
My people love sweet, creamy coleslaw, so I add more sugar as I’m making the dressing.
