I’m a huge believer in using up leftovers in creative ways to avoid wasting my food budget. I often buy bulk chicken at discount and then quickly cook it in the slower cooker for a whole host of recipes. This is one of my leftover cooked chicken go to recipes and it’s always a huge hit!
I use pantry staples on hand like Duke’s mayonnaise and HEB Chicken Fajita Seasoning to make the taste buds dance. A little green onion and dill relish bring the party. I highly recommend this for meal planning and keeping the food budget on track.
Quick & Easy Chicken Salad
This recipe will help you use up those cooked chicken leftovers, or grab a rotisserie chicken from the store.
Ingredients
- 3 cups cooked chicken, diced or shredded
- 1/2 cup mayo (can use lite)
- 1/2 cup relish of choice (I prefer dill)
- 1/4 cup chopped green onions
- 1 Tbsp fajita seasoning
- dash salt & pepper to taste
Instructions
- Pull out your cooked chicken and chop it into the size you'd like on a sandwich
- In a bowl, toss your chicken, mayo, relish, green onion, and seasonings. Stir well. Enjoy
