1/4 cup Kentucky bourbon, 1/4 cup soy sauce, 1/4 cup brown sugar, 2 cloves minced garlic, 1/4 cup dijon mustard, 1 tsp minced ginger, 2 tsp Worcestershire sauce, 1/4 cup light oil, dash hot sauce (optional)
Place pork loin into a marinading bag and cover with blended marinade. Marinate for 12 - 24 hours, but not longer than 24 hours. Loin will become bitter after 24 hours.
3 pounds pork loin
Cooking
Preheat oven to 350°. Pull loin out of marinade and place on roasting pan with rack. Bake uncovered for about 1.5 hours (this depends on the size of your loin roast). Loin is done when the internal temp is above 145° (medium rare).
Notes
You can use the leftover marinade for a fabulous gravy, but you must bring marinade to a boil and boil for 5 full minutes to kill all bacteria. While marinade boils, whisk 2 Tbsp corn starch into 1/4 cup cold water. After marinade boils, whisk in corn starch and whisk constantly till thick.
