Quickly and easily make your own tzatziki sauce to dip warm pita in or top a number of great Greek dishes with. Sauce is best if it can sit for a couple hours to come together, it's even more amazing after an overnight rest.
Use a vegetable peeler to peel the cucumber. Cut those peels into small bits.
1 peel of cucumber
Chop the fresh dill into small bits.
2 Tbsp fresh dill, chopped
Scoop the sour cream into a small bowl. Add the bits of cucumber peel and fresh dill, mix well.
2 cups sour cream*
Add into the sour cream the minced garlic, lemon juice, olive oil, white pepper, and salt. Mix well. Allow to come together in the fridge for a few hours. Enjoy!

Notes
*I like thicker tzatziki sauce, so I use sour cream. If you would like to use plain Greek yogurt, be aware of how much liquid is already in the yogurt and adjust the liquids you add accordingly. It will thicken a little while it sits. You can strain the Greek yogurt to make it thicker if you'd like.I like more garlic in my tzatziki sauce, if you prefer less, then use only 2 cloves of garlic minced.
