Bourbon Marinated Pork Loin

This recipe is a family favorite and much loved by the guests who have had it. It’s best to let the pork loin sit overnight in the marinade, but you can pull this off in less time, you just won’t have the full flavor infused.

Bourbon?

Yes, you will use real bourbon for this recipe. When it comes to bourbon, use whatever bourbon you love. I generally cook with Jim Beam because it’s cheaper and my husband doesn’t want me touching his Angel’s Envy 😜 Yes, you will taste the bourbon in the pork loin so if you really just don’t like the taste of bourbon, this recipe may not be for you.

Pork Loin

This is a great recipe for part of your pork loin if you buy them in bulk on sale!

When a pork loin goes on sale at the store, we grab a couple, cut them into thirds, and so this recipe uses 1/3 of a full pork loin. If you are feeding a large crowd, use more pork loin and double the marinade recipe. If you want to cut down on the marinating time and baking, grab a pork tenderloin. The smaller cut of meat will marinate faster and bake quicker.

I love serving pork with a mashed sweet potato. It’s an amazing pairing!


Bourbon Marinated Pork Loin

Equipment

Ingredients
  

  • 3 pounds pork loin

Marinade

  • 1/4 cup Kentucky bourbon
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves minced garlic
  • 1/4 cup dijon mustard
  • 1 tsp minced ginger
  • 2 tsp Worcestershire sauce
  • 1/4 cup light oil
  • dash hot sauce (optional)

Instructions
 

Marinate Pork Loin

  • Blend all marinade ingredients together well.
    1/4 cup Kentucky bourbon, 1/4 cup soy sauce, 1/4 cup brown sugar, 2 cloves minced garlic, 1/4 cup dijon mustard, 1 tsp minced ginger, 2 tsp Worcestershire sauce, 1/4 cup light oil, dash hot sauce (optional)
  • Place pork loin into a marinading bag and cover with blended marinade. Marinate for 12 – 24 hours, but not longer than 24 hours. Loin will become bitter after 24 hours.
    3 pounds pork loin

Cooking

  • Preheat oven to 350°. Pull loin out of marinade and place on roasting pan with rack. Bake uncovered for about 1.5 hours (this depends on the size of your loin roast). Loin is done when the internal temp is above 145° (medium rare).

Notes

You can use the leftover marinade for a fabulous gravy, but you must bring marinade to a boil and boil for 5 full minutes to kill all bacteria. While marinade boils, whisk 2 Tbsp corn starch into 1/4 cup cold water. After marinade boils, whisk in corn starch and whisk constantly till thick.
