Born from my family’s dislike of steamed cabbage rolls, this cabbage soup quickly became a family favorite. This soup is ALWAYS on the menu after a long trip and helps us to fix that nasty travel gut. I’ve taken this soup to friends who are sick or those who have just had a baby. One friend said:

Hearty & Healthy Cabbage Soup
A delicious, low calorie soup that offers the added bonus of making your gut happy.
Ingredients
- 2-4 Tbsp butter
- 1 head green cabbage, chopped
- 1 medium onion, diced your choice: white, yellow, or sweet
- 26 ounce tomato soup whichever brand you prefer, homemade also works well
- 28 ounce diced tomatoes with juices I prefer petite diced for this recipe, but you can use the larger chunks if you prefer
- 32 ounce sauerkraut of choice homemade or fermented both work well
- 1 pound ground beef, browned strain off grease
- 3 Tbsp Italian seasoning
- 1 Tbsp Greek seasoning
- dash both salt and pepper to taste
Instructions
- Place large stock pot on stovetop, drop butter in, set temp to medium
- Chop cabbage and dice onion, toss into pot with butter and sweat till cabbage looks moist and onion is translucent.
- Open cans of tomato soup, diced tomatoes, and sauerkraut, then pour all contents into stock pot.
- Cover the top of the stock pot with desired amount of Italian and Greek seasoning. Stir them into cabbage soup.
- In separate pot, brown the ground beef to desired doneness, and strain off grease (if any). Spoon the browned ground beef into the soup.
- Lower heat to low and allow soup to simmer, covered, for 4 hours. Serve with bread or rolls.

I just made this for dinner and it was so yummy and filling! I tweaked it a bit based on the time I had and what I had on hand and it was still delicious!
