I love waffles! I think the first waffle maker I was gifted was way back in 2005. It took up precious cabinet space, but man was that worth it.
What kind of waffle maker?
The type of waffle maker (they are sometimes still called a waffle iron) is completely up to you! You can get a mini waffle maker to keep your portions under control. You could grab the Ninja Belgium waffle maker to save counter space. I love my double sided waffle maker, but it does take up counter space (I store mine in my pantry). I have even seen Texas shaped waffle makers, because here in Texas we love Texas! Most waffle makers have a temperature setting to make the waffle exactly how you like it. I crank mine to 5 for a nice dark waffle. Most of them also have a timer that begins once you close the waffle maker, so you will hear a beep when the waffle is done baking. This is very handy!
Can I use home-milled flour?
Yes, absolutely you can! Keep in mind that all the bran in the home-milled flour is heavy, so if you choose to use 100% whole grain flour, you will need to add a second tablespoon of baking powder to your batter to help puff the pancakes. I prefer to use a flour mixture of 50% whole grain and 50% not. Whether that means sifting the home milled flour to remove the bran and heavy parts, or using a lighter flour that I have on hand.
Do I have to use buttermilk?
Not at all. I simply prefer using buttermilk in my baking. If you really don’t like the taste of buttermilk, use the ‘regular waffles’ recipe, which has regular milk in it.
Can I make this Keto?
I haven’t tried that yet, but I’m betting you could swap the flour with almond flour and use almond milk for the dairy.
I love baking and working with buttermilk. There is a rich, tanginess to the buttermilk that broadens the taste of baked goods. This is a great way to use up the leftover whey if you make homemade butter.

Kay’s Buttermilk Waffles

Ingredients
- 1 3/4 cup all purpose flour
- 1 Tablespoon baking powder
- 1 teaspoon baking soda
- 1/4 tsp salt
- 2 large egg yolks
- 1 3/4 cups buttermilk
- 1/2 cup light cooking oil
- 2 large egg whites
Instructions
- Measure all dry ingredients into a bowl and whisk together well.1 3/4 cup all purpose flour, 1 Tablespoon baking powder, 1 teaspoon baking soda, 1/4 tsp salt
- In a separate bowl place the egg yolks, buttermilk, and oil. Whisk well, though the oil won't fully blend with the buttermilk.2 large egg yolks, 1 3/4 cups buttermilk, 1/2 cup light cooking oil
- Pour the blended wet ingredients into the dry and stir. You won't remove all the lumps, don't over stir the batter.
- In a small bowl, whisk the egg whites until stiff peaks form. This may take a little while.2 large egg whites
- Gently fold the egg whites into your batter. You may still see puffs of the whites that don't fully mix, that's ok.
- Preheat your waffle maker per product instructions. Once it's hot, scoop waffle batter into the waffle maker. Depending on how dark you prefer your waffle, this can take 2-5 minutes.
- Carefully remove your cooked waffle and repeat until all the batter is used up.
- Spread your waffles with your favorite toppings and enjoy!

Kay’s Home Milled Wheat Waffles

- 3/4 cup home milled wheat flour*
- 1 cup all purpose flour
- 1 Tbsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 2 large egg yolks
- 1 3/4 cups buttermilk
- 1/2 cup light cooking oil
- 2 large egg whites
Instructions
- In a large bowl, measure your dry ingredients and whisk them together.3/4 cup home milled wheat flour*, 1 cup all purpose flour, 1 Tbsp baking powder, 1 tsp baking soda, 1/4 tsp salt
- In a separate bowl mix together your egg yolks, buttermilk, and oil. The oil won't fully incorporate with the buttermilk.2 large egg yolks, 1 3/4 cups buttermilk, 1/2 cup light cooking oil
- Combine the wet and dry ingredients together, stirring until every dry bit is wet. There will still be lumps, you don't want to over mix this batter.
- In a small bowl, beat your egg whites till stiff peaks form. Gently fold the stiff egg whites into the batter. There may be egg whites that don't fully incorporate and that's ok.2 large egg whites
- Preheat your waffle maker per product instructions. Spray some oil into the waffle maker and scoop batter into the waffle maker. Cook to your desired doneness (I like dark and crispy, so mine cook 5 minutes). Carefully remove your waffle from the maker and repeat until all your batter is used up.
- Top your waffles with your favorite toppings and enjoy!
Notes
These waffles use regular milk (or you can swap for a milk substitute). If you don’t care for buttermilk, this is the recipe to use.

Kay’s Regular Waffles
Equipment
- 1 Waffle Maker
Ingredients
- 1 3/4 cup all purpose flour
- 1 Tablespoon baking powder
- 1/4 teaspoon salt
- 2 large egg yolks
- 1 3/4 cup milk
- 1/2 cup light oil
- 2 large egg whites
Instructions
- Preheat your waffle maker.
- In a large bowl, combine the dry ingredients and whisk to combine.1 3/4 cup all purpose flour, 1 Tablespoon baking powder, 1/4 teaspoon salt
- In 2 separate bowls, separate the yolks and the whites of your eggs. Put your egg whites into a bowl big enough to whip them in.
- Into the bowl with your egg yolks, add the milk and oil. Give them a good whisk, but the oil will not fully incorporate with your milk.2 large egg yolks, 1 3/4 cup milk, 1/2 cup light oil
- Combine the egg yolk mixture with the dry ingredients. You will stir them until no dry bits remain. There will still be small lumps, but there should not be large clumps.
- In the egg white bowl, beat the egg whites until stiff peaks form. To check this, pull your beater straight up out of the egg whites. If a peak forms that does not bend over, you have stiff peaks. If your peak leans over at all, you aren't there yet.2 large egg whites
- Gently fold your stiff white egg whites into your batter. Don't over stir this! You may have small white bits visible and that's ok.
- Spray your waffle maker with oil and scoop some batter into the waffle maker covering about half of the waffle impression. These will puff up and fill the space while baking. Lighter waffles take 2-3 minutes, darker ones can take up to 5, depending on your waffle maker. Carefully pull your hot waffle from the waffle maker and top with your favorite toppings.
